Researchers Create Whipped Cream Out of Beer and Plant Waste
The University of Copenhagen has whipped up something creamy and eco-friendly… Researchers have replaced milk fat with lactic acid bacteria, to create a low-fat whipped cream.
“The most difficult aspect of developing an alternative food is getting the texture right,” Associate Professor Jens Risbo said. “A high saturated fat content makes it possible to whip the cream stiff.”
Replacing the fat with lactic acid bacteria, the kind found when brewing beer or in plant waste, allowed researchers to create a similar texture. This method could be used to create other dairy-free, sustainable alternatives.
